  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  3. Add the diced chicken breast to the skillet, cooking until browned on all sides, about 5-7 minutes.
  4. Stir in the diced zucchini, ground cinnamon, ground cumin, salt, and black pepper. Cook for another 5 minutes until the zucchini starts to soften.
  5. Drain the soaked rice and add it to the skillet, mixing well with the chicken and zucchini.
  6. Pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and has absorbed all the liquid.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, garnish with chopped parsley and toasted pine nuts before serving.
