- Chicken broth - 2 cups
- Olive oil - 2 tablespoons
- Ground cinnamon - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 2 tablespoons, toasted
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the diced chicken breast to the skillet, cooking until browned on all sides, about 5-7 minutes.
- Stir in the diced zucchini, ground cinnamon, ground cumin, salt, and black pepper. Cook for another 5 minutes until the zucchini starts to soften.
- Drain the soaked rice and add it to the skillet, mixing well with the chicken and zucchini.
- Pour in the chicken broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and has absorbed all the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with chopped parsley and toasted pine nuts before serving.
