- Long-grain rice - 1 cup (200g)
- Chicken breast, diced - 200g
- Zucchini, diced - 1 medium (150g)
- Brown lentils - 1/2 cup (100g)
- Onion, finely chopped - 1 small (75g)
- Garlic, minced - 2 cloves
- Olive oil - 2 tablespoons (30ml)
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 2 cups (480ml)
- Fresh parsley, chopped - 2 tablespoons (optional for garnish)
Steps
- Rinse the brown lentils under cold water and soak them in water for at least 30 minutes.
- In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced chicken breast to the pot. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Stir in the ground cumin, cinnamon, salt, and black pepper. Add the diced zucchini and cook for an additional 3 minutes.
- Drain the lentils and add them to the pot along with the chicken broth. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- Add the rinsed rice to the pot, stir well, cover, and let it cook for another 15-20 minutes or until the rice and lentils are tender and the liquid is absorbed.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork. Garnish with chopped parsley if desired and serve warm.
