Ingredients

  • Long-grain rice - 1 cup (200g)
  • Chicken breast, diced - 200g
  • Zucchini, diced - 1 medium (150g)
  • Brown lentils - 1/2 cup (100g)
  • Onion, finely chopped - 1 small (75g)
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons (30ml)
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 2 cups (480ml)
  • Fresh parsley, chopped - 2 tablespoons (optional for garnish)

Steps

  1. Rinse the brown lentils under cold water and soak them in water for at least 30 minutes.
  2. In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced chicken breast to the pot. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Stir in the ground cumin, cinnamon, salt, and black pepper. Add the diced zucchini and cook for an additional 3 minutes.
  5. Drain the lentils and add them to the pot along with the chicken broth. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  7. Add the rinsed rice to the pot, stir well, cover, and let it cook for another 15-20 minutes or until the rice and lentils are tender and the liquid is absorbed.
  8. Remove from heat and let it sit for 5 minutes before fluffing with a fork. Garnish with chopped parsley if desired and serve warm.
