- Basmati rice - 150 grams
- Chicken thighs, boneless and skinless - 250 grams
- Zucchini, medium-sized - 2 pieces
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Olive oil - 2 tablespoons
- Chicken broth - 400 ml
- Ground cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Cut the chicken thighs into bite-sized pieces and add to the skillet. Cook until browned on all sides, about 7-10 minutes.
- Stir in the ground cinnamon, allspice, salt, and black pepper. Mix well to coat the chicken with the spices.
- Slice the zucchini into half-moons and add them to the skillet. Cook for about 5 minutes until they begin to soften.
- Drain the rice and add it to the skillet, stirring gently to combine with the chicken and zucchini.
- Pour in the chicken broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork. Garnish with fresh parsley before serving.
