Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs, boneless and skinless - 250 grams
  • Zucchini, medium-sized - 2 pieces
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Chicken broth - 400 ml
  • Ground cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Cut the chicken thighs into bite-sized pieces and add to the skillet. Cook until browned on all sides, about 7-10 minutes.
  5. Stir in the ground cinnamon, allspice, salt, and black pepper. Mix well to coat the chicken with the spices.
  6. Slice the zucchini into half-moons and add them to the skillet. Cook for about 5 minutes until they begin to soften.
  7. Drain the rice and add it to the skillet, stirring gently to combine with the chicken and zucchini.
  8. Pour in the chicken broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  9. Remove from heat and let it sit for 5 minutes before fluffing with a fork. Garnish with fresh parsley before serving.
