- Basmati rice - 150 grams
- Zucchini - 2 medium-sized

- Vegetable broth - 400 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- While the rice is soaking, wash and cut the zucchini into small cubes.
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the zucchini cubes and cook for about 5 minutes, until they begin to soften.
- Add the soaked rice to the pan and mix well with the zucchini and onions.
- Pour in the vegetable broth and add the ground cumin, ground coriander, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
- Garnish with chopped fresh parsley before serving.
