Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 2 medium-sized
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. While the rice is soaking, wash and cut the zucchini into small cubes.
  3. Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Stir in the zucchini cubes and cook for about 5 minutes, until they begin to soften.
  6. Add the soaked rice to the pan and mix well with the zucchini and onions.
  7. Pour in the vegetable broth and add the ground cumin, ground coriander, salt, and black pepper. Stir to combine.
  8. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  9. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
  10. Garnish with chopped fresh parsley before serving.
