Ingredients

  • Long-grain rice - 1 cup
  • Green or brown lentils - 1/2 cup
  • Zucchini - 2 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 2 cups
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the rice and lentils under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Add the diced zucchini to the saucepan and cook for about 5 minutes until slightly softened.
  4. Stir in the rinsed lentils, cumin, salt, and black pepper, and cook for another 2 minutes.
  5. Add the vegetable broth to the saucepan and bring to a boil. Once boiling, add the rinsed rice, stir well, and reduce the heat to low.
  6. Cover the saucepan and let it simmer for about 20-25 minutes or until the rice and lentils are cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with chopped fresh parsley before serving.
