- Long-grain rice - 1 cup
- Green or brown lentils - 1/2 cup
- Zucchini - 2 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the rice and lentils under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the diced zucchini to the saucepan and cook for about 5 minutes until slightly softened.
- Stir in the rinsed lentils, cumin, salt, and black pepper, and cook for another 2 minutes.
- Add the vegetable broth to the saucepan and bring to a boil. Once boiling, add the rinsed rice, stir well, and reduce the heat to low.
- Cover the saucepan and let it simmer for about 20-25 minutes or until the rice and lentils are cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped fresh parsley before serving.
