Ingredients

  • Basmati rice - 150 grams
  • Green lentils - 100 grams
  • Zucchini - 2 medium-sized (approximately 200 grams)
  • Onion - 1 medium (about 100 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth or water - 500 ml
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a pot, add the green lentils and cover them with 500 ml of vegetable broth or water. Bring to a boil, then reduce the heat and simmer for about 15 minutes until tender. Drain and set aside.
  3. While the lentils are cooking, heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  4. Add minced garlic and cook for an additional minute until fragrant.
  5. Chop the zucchini into small cubes and add them to the skillet. Sauté for about 5-7 minutes until they are slightly tender.
  6. Drain the soaked rice and add it to the skillet along with cumin, salt, and black pepper. Stir well to combine all ingredients.
  7. Add the cooked lentils to the skillet, and pour in 500 ml of vegetable broth or water. Bring to a boil, then cover and reduce the heat to low. Let it cook for about 15-20 minutes until the rice is fully cooked and has absorbed the liquid.
  8. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with chopped fresh parsley and serve hot.
