- Basmati rice - 150 grams
- Green lentils - 100 grams
- Zucchini - 2 medium-sized (approximately 200 grams)
- Onion - 1 medium (about 100 grams)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth or water - 500 ml
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a pot, add the green lentils and cover them with 500 ml of vegetable broth or water. Bring to a boil, then reduce the heat and simmer for about 15 minutes until tender. Drain and set aside.
- While the lentils are cooking, heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Chop the zucchini into small cubes and add them to the skillet. Sauté for about 5-7 minutes until they are slightly tender.
- Drain the soaked rice and add it to the skillet along with cumin, salt, and black pepper. Stir well to combine all ingredients.
- Add the cooked lentils to the skillet, and pour in 500 ml of vegetable broth or water. Bring to a boil, then cover and reduce the heat to low. Let it cook for about 15-20 minutes until the rice is fully cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped fresh parsley and serve hot.
