Ingredients

  • Basmati rice - 150 grams
  • Zucchini - 200 grams, diced
  • Chicken breast - 200 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chicken broth - 300 mL
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  3. Add the diced zucchini to the pot and cook for 5 minutes, stirring occasionally.
  4. Stir in the soaked rice, cumin, paprika, turmeric, salt, and black pepper. Mix well to coat the rice with the spices.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and liquid is absorbed.
  6. Meanwhile, in a skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the sliced chicken breast, season with salt and pepper, and cook for 6-8 minutes, or until browned and cooked through.
  7. Once the rice is done, fluff it with a fork and stir in the chopped parsley.
  8. Serve the rice topped with the chicken shawarma and a wedge of lemon on the side.
