- Basmati rice - 150 grams
- Zucchini - 200 grams, diced
- Chicken breast - 200 grams, thinly sliced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chicken broth - 300 mL
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the diced zucchini to the pot and cook for 5 minutes, stirring occasionally.
- Stir in the soaked rice, cumin, paprika, turmeric, salt, and black pepper. Mix well to coat the rice with the spices.
- Pour in the chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and liquid is absorbed.
- Meanwhile, in a skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the sliced chicken breast, season with salt and pepper, and cook for 6-8 minutes, or until browned and cooked through.
- Once the rice is done, fluff it with a fork and stir in the chopped parsley.
- Serve the rice topped with the chicken shawarma and a wedge of lemon on the side.
