Ingredients
- Basmati rice - 1 cup
- Zucchini - 2 medium, diced
- Shawarma chicken - 250 grams, sliced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chicken broth - 2 cups
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced zucchini to the skillet, cooking for another 5 minutes until the zucchini is slightly tender.
- Stir in the shawarma chicken slices, cumin, paprika, cinnamon, salt, and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Drain the soaked rice and add it to the skillet. Pour in the chicken broth and bring to a boil.
- Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
