Ingredients

  • Basmati rice - 1 cup
  • Zucchini - 2 medium, diced
  • Shawarma chicken - 250 grams, sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chicken broth - 2 cups
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced zucchini to the skillet, cooking for another 5 minutes until the zucchini is slightly tender.
  4. Stir in the shawarma chicken slices, cumin, paprika, cinnamon, salt, and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  5. Drain the soaked rice and add it to the skillet. Pour in the chicken broth and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh parsley and serve warm.
