Ingredients

  • Long-grain rice - 150 grams
  • Ground beef or lamb - 200 grams
  • Zucchini - 2 medium-sized
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Water - 400 milliliters
  • Fresh parsley - for garnish (optional)

Steps

  1. Rinse the rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. In a large skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and ground meat to the skillet, cooking until the meat is browned. Drain excess fat if necessary.
  4. Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes until the spices are fragrant.
  5. Cut the zucchini into thin rounds or half-moons and add them to the meat mixture. Stir to combine and cook for about 5 minutes until the zucchini softens slightly.
  6. Add the soaked and drained rice to the skillet, mixing well with the meat and zucchini.
  7. Pour in the water, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until the rice is cooked and has absorbed the liquid.
  8. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh parsley if desired and serve warm.
