- Long-grain rice - 150 grams
- Ground beef or lamb - 200 grams
- Zucchini - 2 medium-sized
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Water - 400 milliliters
- Fresh parsley - for garnish (optional)
Steps
- Rinse the rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- In a large skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and ground meat to the skillet, cooking until the meat is browned. Drain excess fat if necessary.
- Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes until the spices are fragrant.
- Cut the zucchini into thin rounds or half-moons and add them to the meat mixture. Stir to combine and cook for about 5 minutes until the zucchini softens slightly.
- Add the soaked and drained rice to the skillet, mixing well with the meat and zucchini.
- Pour in the water, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until the rice is cooked and has absorbed the liquid.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley if desired and serve warm.
