- Onion - 1 small, chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced chicken to the skillet. Cook until the chicken is browned and cooked through, about 7-10 minutes.
- Stir in the cumin, cinnamon, salt, and black pepper. Cook for an additional 2 minutes until the spices are fragrant.
- While the chicken is cooking, spiralize or finely chop the zucchini. In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the zucchini and sauté for about 3-4 minutes until just tender.
