Ingredients

  • Basmati rice - 1 cup
  • Zucchini (Kousa) - 2 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 2 cups
  • Yogurt - 1 cup
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced zucchini to the pot, cooking for another 5 minutes until the zucchini softens.
  4. Stir in the ground cumin, salt, and black pepper, and sauté for another minute to release the spices' aromas.
  5. Drain the soaked rice and add it to the pot, stirring to combine with the vegetables.
  6. Pour in the vegetable broth, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
  7. In a small bowl, mix the yogurt with lemon juice and a pinch of salt to create a creamy sauce.
  8. Once the rice is cooked, fluff it with a fork and serve topped with the yogurt sauce and chopped parsley.
