Ingredients

  • Lamb shoulder, cubed - 250 grams
  • Zucchini, medium - 2 units
  • Basmati rice - 100 grams
  • Onion, finely chopped - 1 unit
  • Garlic, minced - 2 cloves
  • Tomato paste - 1 tablespoon
  • Cinnamon powder - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 400 milliliters
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cubed lamb shoulder to the pot. Cook until the lamb is browned on all sides, about 7-10 minutes.
  3. Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for an additional 2 minutes to combine the flavors.
  4. Add the basmati rice to the pot, stirring well to coat the rice with the spices and meat mixture.
  5. Pour in the water and bring to a boil. Once boiling, reduce heat to low, cover, and let it simmer for 15 minutes.
  6. While the rice is cooking, wash and trim the zucchini, then cut them into thin rounds.
  7. After 15 minutes, carefully stir in the zucchini rounds into the pot, cover again, and cook for another 10 minutes until the rice and zucchini are tender.
  8. Remove from heat and let it sit covered for an additional 5 minutes before fluffing the rice with a fork.
  9. Serve hot, garnished with freshly chopped parsley.
