- Keshk (fermented whey or yogurt) - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Mint leaves - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced zucchini to the pan, cooking for another 5 minutes until the zucchini softens.
- Stir in the cauliflower rice, salt, and black pepper, mixing well. Cook for about 5 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 10 minutes, or until the cauliflower rice is tender.
- In a separate bowl, mix the keshk with lemon juice and a bit of water to thin it out, if necessary.
- Once the cauliflower rice is cooked, stir in the keshk mixture and chopped mint leaves. Cook for an additional 2-3 minutes, stirring well until everything is combined.
- Remove from heat, adjust seasoning if necessary, and serve warm.
