Ingredients

  • zucchini - 2 medium-sized
  • ground lamb or beef - 200 grams
  • onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • pine nuts - 30 grams, toasted
  • cinnamon - 1/2 teaspoon
  • allspice - 1/2 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • cauliflower rice - 200 grams
  • olive oil - 2 tablespoons
  • fresh parsley - 2 tablespoons, chopped
  • water - 500 milliliters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the zucchini and scoop out the insides using a small spoon, making sure to leave the skin intact.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
  4. Add the minced garlic and ground meat to the skillet, cooking until the meat is browned.
  5. Stir in the toasted pine nuts, cinnamon, allspice, salt, and black pepper, mixing well. Remove from heat and let the mixture cool slightly.
  6. Stuff each zucchini with the meat mixture and place them in a baking dish.
  7. In a separate pot, heat the remaining tablespoon of olive oil and add the cauliflower rice, stirring for about 3-4 minutes until slightly tender.
  8. Add 500 milliliters of water to the cauliflower rice and bring to a boil, then reduce heat and simmer for about 10 minutes until the rice is cooked.
  9. Spoon the cauliflower rice onto plates and place the stuffed zucchinis on top.
  10. Garnish with fresh parsley before serving.
