- zucchini - 2 medium-sized
- ground lamb or beef - 200 grams
- onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- pine nuts - 30 grams, toasted
- cinnamon - 1/2 teaspoon
- allspice - 1/2 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- cauliflower rice - 200 grams
- olive oil - 2 tablespoons
- fresh parsley - 2 tablespoons, chopped
- water - 500 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the zucchini and scoop out the insides using a small spoon, making sure to leave the skin intact.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and ground meat to the skillet, cooking until the meat is browned.
- Stir in the toasted pine nuts, cinnamon, allspice, salt, and black pepper, mixing well. Remove from heat and let the mixture cool slightly.
- Stuff each zucchini with the meat mixture and place them in a baking dish.
- In a separate pot, heat the remaining tablespoon of olive oil and add the cauliflower rice, stirring for about 3-4 minutes until slightly tender.
- Add 500 milliliters of water to the cauliflower rice and bring to a boil, then reduce heat and simmer for about 10 minutes until the rice is cooked.
- Spoon the cauliflower rice onto plates and place the stuffed zucchinis on top.
- Garnish with fresh parsley before serving.
