Ingredients
- Long-grain rice - 1 cup (200g)
- Zucchini - 2 medium-sized (300g)
- Ground beef or lamb - 200g
- Kebbeh spice mix - 1 tablespoon
- Onion - 1 small (100g), finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30g, toasted
- Fresh parsley - 2 tablespoons, chopped
- Water - 2 cups (500ml)
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the ground meat to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the kebbeh spice mix, salt, and black pepper. Cook for an additional 2 minutes before removing from heat.
- In a separate pot, heat 1 tablespoon of olive oil. Add the zucchini, diced into small cubes, and sauté for about 5 minutes until slightly softened.
- Drain the soaked rice and add it to the pot with the zucchini. Stir to combine and sauté for another 2 minutes.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Fluff the rice with a fork and gently mix in the cooked meat mixture and toasted pine nuts.
- Serve hot, garnished with fresh parsley.
