- Ground lamb or beef - 300 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cauliflower rice - 200 grams
- Tomatoes - 1 medium, diced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent.
- Add the ground lamb or beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
- Stir in the cumin, cinnamon, paprika, salt, and black pepper. Cook for another minute until fragrant.
- Add the diced tomatoes to the skillet and simmer for about 10 minutes, allowing the flavors to meld.
- While the meat mixture is simmering, heat the remaining tablespoon of olive oil in another pan over medium heat. Add the sliced zucchini and sauté until tender, about 5 minutes.
- In a large bowl, combine the cooked meat mixture with cauliflower rice and sautéed zucchini. Mix well to combine all the ingredients.
- Serve hot, garnished with fresh parsley.
