Ingredients

  • Zucchini - 2 medium, sliced
  • Ground lamb or beef - 300 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cauliflower rice - 200 grams
  • Tomatoes - 1 medium, diced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent.
  2. Add the ground lamb or beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the cumin, cinnamon, paprika, salt, and black pepper. Cook for another minute until fragrant.
  4. Add the diced tomatoes to the skillet and simmer for about 10 minutes, allowing the flavors to meld.
  5. While the meat mixture is simmering, heat the remaining tablespoon of olive oil in another pan over medium heat. Add the sliced zucchini and sauté until tender, about 5 minutes.
  6. In a large bowl, combine the cooked meat mixture with cauliflower rice and sautéed zucchini. Mix well to combine all the ingredients.
  7. Serve hot, garnished with fresh parsley.
