Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Zucchini - 2 medium, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the grated zucchini, cumin, cinnamon, salt, and black pepper. Cook for about 5 minutes until the zucchini is soft and the mixture is well combined.
  5. Drain the soaked rice and add it to the pot with the zucchini mixture. Stir well to combine and cook for 2 minutes.
  6. Pour in 2 cups of water, bring to a boil, then reduce the heat to low and cover the pot. Let it simmer for 15-20 minutes until the rice is tender and the water is absorbed.
  7. Once cooked, fluff the rice with a fork and stir in the chopped parsley and toasted pine nuts.
