Ingredients

  • Zucchini - 2 medium
  • Cauliflower - 300 grams, riced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, diced
  • Lemon juice - 1 tablespoon
  • Cucumber - 1 small, diced
  • Radishes - 4, thinly sliced
  • Mint leaves - 2 tablespoons, chopped
  • Pomegranate seeds - 1/4 cup

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the zucchini and scoop out the insides, creating hollow boats. Set aside.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Stir in the riced cauliflower, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the cauliflower is tender.
  5. Remove from heat and mix in the chopped parsley and diced tomato.
  6. Stuff the zucchini boats with the cauliflower mixture, pressing down gently to pack it in. Place them in a baking dish and drizzle with the remaining olive oil.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. While the zucchini is baking, prepare the Fattoush salad. In a large bowl, combine the diced cucumber, radishes, mint leaves, and pomegranate seeds.
  9. Drizzle with lemon juice and toss gently to combine.
  10. Once the zucchini are done, remove them from the oven and let them cool for a few minutes before serving with the Fattoush salad on the side.
