Ingredients
- Zucchini - 2 medium
- Cauliflower - 300 grams, riced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Tomato - 1 medium, diced
- Lemon juice - 1 tablespoon
- Cucumber - 1 small, diced
- Radishes - 4, thinly sliced
- Mint leaves - 2 tablespoons, chopped
- Pomegranate seeds - 1/4 cup
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the zucchini and scoop out the insides, creating hollow boats. Set aside.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Stir in the riced cauliflower, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the cauliflower is tender.
- Remove from heat and mix in the chopped parsley and diced tomato.
- Stuff the zucchini boats with the cauliflower mixture, pressing down gently to pack it in. Place them in a baking dish and drizzle with the remaining olive oil.
- Cover the dish with aluminum foil and bake for 25 minutes.
- While the zucchini is baking, prepare the Fattoush salad. In a large bowl, combine the diced cucumber, radishes, mint leaves, and pomegranate seeds.
- Drizzle with lemon juice and toss gently to combine.
- Once the zucchini are done, remove them from the oven and let them cool for a few minutes before serving with the Fattoush salad on the side.
