- Vegetable broth - 2 cups
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon

- Fresh parsley - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Tomatoes - 1 medium, diced
- Cucumber - 1/2 medium, diced
- Radishes - 3, sliced
- Green bell pepper - 1/2, diced

Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated zucchini to the pan, cooking for an additional 3-4 minutes until the zucchini is tender.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and vegetables.
- Add the vegetable broth, cumin, cinnamon, salt, and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and liquid is absorbed.
- While the rice cooks, prepare the fattoush salad by combining diced tomatoes, cucumber, radishes, and green bell pepper in a bowl.
- Drizzle the salad with lemon juice and sprinkle with chopped parsley. Toss gently to combine.
- Once the rice is finished cooking, fluff it with a fork and serve it alongside the fattoush salad. Optionally, top with pita chips for added crunch.
