Ingredients

  • Basmati rice - 150 grams
  • Chicken breast - 200 grams
  • Zucchini - 2 medium (about 250 grams)
  • Onion - 1 medium (about 150 grams)
  • Garlic - 2 cloves
  • Chicken broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. While the rice is soaking, dice the onion and garlic, and cut the zucchini into small cubes.
  3. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Cut the chicken breast into bite-sized pieces and add them to the pot. Cook for about 5-7 minutes until the chicken is no longer pink.
  6. Stir in the diced zucchini, ground cumin, ground cinnamon, salt, and black pepper. Cook for another 5 minutes until the zucchini starts to soften.
  7. Drain the soaked rice and add it to the pot along with the chicken broth. Bring the mixture to a boil.
  8. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
  9. Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with fresh parsley and serve warm.
