- Basmati rice - 150 grams
- Chicken breast - 200 grams
- Zucchini - 2 medium (about 250 grams)
- Onion - 1 medium (about 150 grams)
- Garlic - 2 cloves
- Chicken broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- While the rice is soaking, dice the onion and garlic, and cut the zucchini into small cubes.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Cut the chicken breast into bite-sized pieces and add them to the pot. Cook for about 5-7 minutes until the chicken is no longer pink.
- Stir in the diced zucchini, ground cumin, ground cinnamon, salt, and black pepper. Cook for another 5 minutes until the zucchini starts to soften.
- Drain the soaked rice and add it to the pot along with the chicken broth. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
