Ingredients

  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. While the rice is soaking, heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the pan and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the diced tomato, cinnamon, allspice, salt, and black pepper. Cook for another 5 minutes until the tomato softens.
  5. Add the zucchini, chopped into small cubes, and cook for 5 minutes, stirring occasionally.
  6. Drain the soaked rice and add it to the saucepan, stirring well to combine with the vegetables.
  7. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh parsley and serve hot.
