- Zucchini - 2 medium-sized

- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- While the rice is soaking, heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the pan and cook for an additional 1-2 minutes until fragrant.
- Stir in the diced tomato, cinnamon, allspice, salt, and black pepper. Cook for another 5 minutes until the tomato softens.
- Add the zucchini, chopped into small cubes, and cook for 5 minutes, stirring occasionally.
- Drain the soaked rice and add it to the saucepan, stirring well to combine with the vegetables.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve hot.
