- Long-grain rice - 1 cup
- Green or brown lentils - 1/2 cup
- Zucchini - 2 medium, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the lentils under cold water and soak them for 30 minutes, then drain.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced zucchini and cook for about 5 minutes, until tender.
- Add the rinsed lentils, rice, vegetable broth, cumin, cinnamon, salt, and black pepper to the pot. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice and lentils are cooked and the liquid is absorbed.
- Remove the pot from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice and lentils with a fork, garnish with chopped parsley, and serve warm.
