- Cauliflower rice - 200 grams
- Zucchini - 2 medium, diced
- Red lentils - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the red lentils under cold water and set aside.
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced zucchini to the pan and cook for about 5 minutes until they start to soften.
- Stir in the cumin and cinnamon, cooking for an additional minute to release the spices' aromas.
- Add the rinsed lentils and vegetable broth to the pan. Bring to a boil, then reduce the heat to low and cover, cooking for about 15 minutes or until the lentils are tender.
- Stir in the cauliflower rice, cover again, and cook for an additional 5 minutes until heated through.
- Season with salt and black pepper to taste, then remove from heat.
- Serve hot, garnished with fresh parsley.
