Ingredients

  • Cauliflower rice - 200 grams
  • Zucchini - 2 medium, diced
  • Red lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the red lentils under cold water and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the diced zucchini to the pan and cook for about 5 minutes until they start to soften.
  4. Stir in the cumin and cinnamon, cooking for an additional minute to release the spices' aromas.
  5. Add the rinsed lentils and vegetable broth to the pan. Bring to a boil, then reduce the heat to low and cover, cooking for about 15 minutes or until the lentils are tender.
  6. Stir in the cauliflower rice, cover again, and cook for an additional 5 minutes until heated through.
  7. Season with salt and black pepper to taste, then remove from heat.
  8. Serve hot, garnished with fresh parsley.
