- Zucchini - 4 medium-sized
- Long-grain rice - 100 grams
- Water - 400 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Fresh mint - 1 tablespoon, chopped
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 200 ml
Steps
- Wash the zucchini and cut off the ends, then carefully hollow them out using a small spoon or a corer, leaving about 1 cm of flesh at the bottom.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and garlic until translucent, about 5 minutes.
- Add the diced tomato, rice, parsley, mint, cinnamon, allspice, salt, and black pepper to the skillet, and stir well to combine.
- Pour in 400 ml of water and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Stuff the hollowed zucchini with the rice mixture, pressing gently to pack it in.
- In a large pot, arrange the stuffed zucchini and pour the vegetable broth over them. Bring to a gentle simmer, cover, and cook for 20-25 minutes, until the zucchini are tender.
- Serve warm, drizzled with a little extra olive oil and garnished with additional fresh herbs if desired.
