Ingredients

  • Zucchini - 4 medium-sized
  • Long-grain rice - 100 grams
  • Water - 400 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh mint - 1 tablespoon, chopped
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 200 ml

Steps

  1. Wash the zucchini and cut off the ends, then carefully hollow them out using a small spoon or a corer, leaving about 1 cm of flesh at the bottom.
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and garlic until translucent, about 5 minutes.
  3. Add the diced tomato, rice, parsley, mint, cinnamon, allspice, salt, and black pepper to the skillet, and stir well to combine.
  4. Pour in 400 ml of water and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Stuff the hollowed zucchini with the rice mixture, pressing gently to pack it in.
  6. In a large pot, arrange the stuffed zucchini and pour the vegetable broth over them. Bring to a gentle simmer, cover, and cook for 20-25 minutes, until the zucchini are tender.
  7. Serve warm, drizzled with a little extra olive oil and garnished with additional fresh herbs if desired.
