Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Frozen peas - 100 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrot, green bell pepper, and zucchini. Sauté the vegetables for about 5-7 minutes until they begin to soften.
  5. Mix in the diced tomato and frozen peas, and cook for another 3 minutes.
  6. Drain the soaked rice and add it to the pot with the vegetables, stirring gently to combine.
  7. Pour in the 400 milliliters of water, and add salt, black pepper, and ground cumin. Bring to a boil.
  8. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until the rice is cooked and water is absorbed.
  9. Turn off the heat and let the rice sit covered for 5 minutes. Fluff with a fork and stir in the chopped parsley and lemon juice before serving.
