Ingredients
- Basmati rice - 150 grams
- Water - 400 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Frozen peas - 100 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrot, green bell pepper, and zucchini. Sauté the vegetables for about 5-7 minutes until they begin to soften.
- Mix in the diced tomato and frozen peas, and cook for another 3 minutes.
- Drain the soaked rice and add it to the pot with the vegetables, stirring gently to combine.
- Pour in the 400 milliliters of water, and add salt, black pepper, and ground cumin. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until the rice is cooked and water is absorbed.
- Turn off the heat and let the rice sit covered for 5 minutes. Fluff with a fork and stir in the chopped parsley and lemon juice before serving.
