- Basmati rice - 150 grams
- Lamb shoulder, cubed - 300 grams
- Onion, finely chopped - 1 medium (about 150 grams)
- Garlic, minced - 2 cloves
- Ground cinnamon - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Water - 500 milliliters
- Plain yogurt - 150 grams
- Fresh parsley, chopped - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cubed lamb to the pot. Cook until the lamb is browned on all sides.
- Stir in the ground cinnamon, ground cumin, salt, and black pepper, mixing well to coat the lamb.
- Add the soaked and drained rice to the pot, stirring gently to incorporate it with the lamb and spices.
- Pour in 500 milliliters of water, bring to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the water.
- Once cooked, remove from heat and let it sit, covered, for another 10 minutes to steam.
- Fluff the rice with a fork and serve hot, topped with a generous dollop of plain yogurt and garnished with chopped parsley.
