Ingredients

  • Basmati rice - 150 grams
  • Lamb shoulder, cubed - 300 grams
  • Onion, finely chopped - 1 medium (about 150 grams)
  • Garlic, minced - 2 cloves
  • Ground cinnamon - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Water - 500 milliliters
  • Plain yogurt - 150 grams
  • Fresh parsley, chopped - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and cubed lamb to the pot. Cook until the lamb is browned on all sides.
  4. Stir in the ground cinnamon, ground cumin, salt, and black pepper, mixing well to coat the lamb.
  5. Add the soaked and drained rice to the pot, stirring gently to incorporate it with the lamb and spices.
  6. Pour in 500 milliliters of water, bring to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the water.
  7. Once cooked, remove from heat and let it sit, covered, for another 10 minutes to steam.
  8. Fluff the rice with a fork and serve hot, topped with a generous dollop of plain yogurt and garnished with chopped parsley.
