Ingredients
- Basmati rice - 150 grams
- Lamb shoulder, cubed - 250 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Cinnamon stick - 1
- Allspice berries - 5
- Black peppercorns - 5
- Salt - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Chicken or vegetable broth - 300 ml
- Fresh parsley, chopped - 2 tablespoons
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a heavy pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant, then add the cubed lamb. Brown the lamb on all sides for about 10 minutes.
- Stir in the cinnamon stick, allspice berries, black peppercorns, and salt. Cook for another 2 minutes to toast the spices.
- Add the soaked rice (drained) to the pot and stir it with the lamb and spices for 2-3 minutes to coat the rice.
- Pour in the chicken or vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, prepare the yogurt sauce by mixing yogurt with lemon juice and a pinch of salt in a bowl. Set aside.
- Once the rice is done, fluff it gently with a fork and sprinkle with chopped parsley before serving.
- Serve the Riz Bil Kharouf Wa Fawda hot, drizzled with the yogurt sauce.
