Ingredients

  • Basmati rice - 200 grams
  • Lamb shoulder, diced - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Cinnamon stick - 1
  • Allspice - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken or vegetable broth - 500 ml
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Add the diced lamb to the pot and brown on all sides, about 8-10 minutes.
  5. Stir in the cinnamon stick, allspice, salt, and black pepper, and cook for another 2 minutes to combine the flavors.
  6. Pour in the chicken or vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Simmer for 30 minutes until the lamb is tender.
  7. While the lamb is cooking, drain the soaked rice and add it to the pot after the 30 minutes are up. Stir gently to combine, then cover and cook for an additional 15-20 minutes until the rice is fluffy and cooked through.
  8. Once done, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped parsley.
  9. Serve warm with lemon wedges on the side.
