- Basmati rice - 150 grams
- Keshk (fermented wheat) - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 400 ml
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the soaked and drained rice to the saucepan, stirring to coat the rice with the oil and onion mixture.
- In a separate bowl, mix the keshk with the vegetable broth until well combined, then pour this mixture into the saucepan with the rice.
- Add the cinnamon, cumin, salt, and black pepper to the rice and broth mixture, stirring gently to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
