Ingredients

  • Basmati rice - 150 grams
  • Keshk (fermented wheat) - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 400 ml
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the soaked and drained rice to the saucepan, stirring to coat the rice with the oil and onion mixture.
  5. In a separate bowl, mix the keshk with the vegetable broth until well combined, then pour this mixture into the saucepan with the rice.
  6. Add the cinnamon, cumin, salt, and black pepper to the rice and broth mixture, stirring gently to combine.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  8. Once cooked, remove from heat and let it sit, covered, for another 5 minutes.
  9. Fluff the rice with a fork, garnish with fresh parsley, and serve hot.
