Ingredients
- Long-grain rice - 1 cup
- Water - 2 cups
- Ground beef or lamb - 250 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Ground cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Pine nuts - 30 grams, toasted (optional)
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes.
- In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- In a bowl, combine the ground meat, parsley, cinnamon, allspice, salt, and black pepper. Mix until well combined.
- Form the meat mixture into small meatballs or patties, about the size of a golf ball.
- In the same pan, add the remaining tablespoon of olive oil and sear the meatballs until browned on all sides, about 8-10 minutes. Remove from the pan and set aside.
- In the same pan, add the soaked and drained rice, stirring for 2-3 minutes to coat it in the oil and flavors.
- Add the water to the pan, bring to a boil, then reduce heat to low and cover. Cook for 15 minutes.
- After 15 minutes, place the browned meatballs on top of the rice, cover again, and cook for an additional 10 minutes until the rice is tender and has absorbed the water.
- Remove from heat and let it sit for 5 minutes before serving. Fluff the rice with a fork, garnish with toasted pine nuts if desired, and serve warm.
