- Basmati rice - 150 grams
- Ground lamb or beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon powder - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken or vegetable broth - 400 ml
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Increase the heat to medium-high and add the ground lamb or beef. Cook until browned, breaking it apart with a spoon, about 7 minutes.
- Stir in the cinnamon, allspice, salt, and black pepper, mixing well to coat the meat with the spices.
- Add the drained rice to the skillet and stir to combine with the meat and spices. Cook for 2 minutes.
- Pour in the chicken or vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- Serve the rice topped with toasted pine nuts and chopped parsley. Garnish with lemon wedges on the side.
