Ingredients

  • Basmati rice - 150 grams
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon powder - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken or vegetable broth - 400 ml
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for another minute until fragrant.
  4. Increase the heat to medium-high and add the ground lamb or beef. Cook until browned, breaking it apart with a spoon, about 7 minutes.
  5. Stir in the cinnamon, allspice, salt, and black pepper, mixing well to coat the meat with the spices.
  6. Add the drained rice to the skillet and stir to combine with the meat and spices. Cook for 2 minutes.
  7. Pour in the chicken or vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  9. Serve the rice topped with toasted pine nuts and chopped parsley. Garnish with lemon wedges on the side.
