Ingredients

  • Basmati rice - 200 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 3 cloves
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cinnamon powder - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrot, bell pepper, and zucchini to the pot, cooking for about 5-7 minutes until the vegetables are slightly tender.
  5. Sprinkle in the cumin, coriander, turmeric, cinnamon, salt, and black pepper, stirring well to coat the vegetables with the spices.
  6. Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
  7. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  8. Once done, remove from heat and let it sit covered for 5 minutes before fluffing the rice with a fork.
  9. Stir in the chopped parsley and lemon juice before serving.
