Ingredients

  • Basmati rice - 200 grams
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Chicken or vegetable broth - 500 ml
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak in warm water for 20 minutes.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground lamb or beef to the skillet. Cook until browned, breaking it apart with a spoon, about 6-8 minutes.
  5. Stir in the cinnamon, allspice, cumin, salt, and black pepper, mixing thoroughly. Cook for another 2 minutes to let the spices bloom.
  6. Drain the soaked rice and add it to the skillet with the meat mixture. Stir to combine, allowing the rice to soak up the flavors for a couple of minutes.
  7. Pour in the chicken or vegetable broth, bring to a boil, then reduce to low heat, cover, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
  8. Once cooked, remove from heat and let it sit covered for another 5 minutes.
  9. Fluff the rice gently with a fork, then serve topped with toasted pine nuts and chopped parsley.
