- Basmati rice - 200 grams
- Ground lamb or beef - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Chicken or vegetable broth - 500 ml
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak in warm water for 20 minutes.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the ground lamb or beef to the skillet. Cook until browned, breaking it apart with a spoon, about 6-8 minutes.
- Stir in the cinnamon, allspice, cumin, salt, and black pepper, mixing thoroughly. Cook for another 2 minutes to let the spices bloom.
- Drain the soaked rice and add it to the skillet with the meat mixture. Stir to combine, allowing the rice to soak up the flavors for a couple of minutes.
- Pour in the chicken or vegetable broth, bring to a boil, then reduce to low heat, cover, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
- Once cooked, remove from heat and let it sit covered for another 5 minutes.
- Fluff the rice gently with a fork, then serve topped with toasted pine nuts and chopped parsley.
