- Basmati rice - 1 cup (200g)
- Ground lamb or beef - 250g
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Cinnamon - 1 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken or beef broth - 2 cups (500ml)
- Pine nuts - 30g, toasted
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain well before use.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
- Add the ground lamb or beef to the skillet, breaking it apart with a spoon. Cook until browned, about 7-10 minutes.
- Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes until the spices are well combined with the meat.
- In a separate pot, bring the chicken or beef broth to a boil. Add the soaked and drained rice to the pot, reduce heat to low, cover, and let simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and gently fold in the meat mixture. Serve warm, garnished with toasted pine nuts and fresh parsley.
