Ingredients

  • Cauliflower rice - 300 grams
  • Hummus - 150 grams
  • Chicken breast - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Cut the chicken breast into bite-sized pieces and add it to the skillet, cooking until browned and cooked through, about 7-10 minutes.
  4. Stir in the cumin, cinnamon, salt, and black pepper, mixing well to combine the flavors.
  5. In a separate pot, heat the remaining tablespoon of olive oil and add the cauliflower rice, cooking for about 5 minutes until tender.
  6. Once the cauliflower rice is cooked, stir in the hummus until well combined and heated through.
  7. Serve the cauliflower rice topped with the sautéed chicken mixture and garnish with fresh parsley.
