- Cauliflower rice - 300 grams
- Hummus - 150 grams
- Chicken breast - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Cut the chicken breast into bite-sized pieces and add it to the skillet, cooking until browned and cooked through, about 7-10 minutes.
- Stir in the cumin, cinnamon, salt, and black pepper, mixing well to combine the flavors.
- In a separate pot, heat the remaining tablespoon of olive oil and add the cauliflower rice, cooking for about 5 minutes until tender.
- Once the cauliflower rice is cooked, stir in the hummus until well combined and heated through.
- Serve the cauliflower rice topped with the sautéed chicken mixture and garnish with fresh parsley.
