Ingredients

  • Basmati rice - 150 grams
  • Cooked chickpeas - 100 grams
  • Hummus - 100 grams
  • Vegetable broth - 300 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak for 15 minutes.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, and ground coriander, cooking for an additional 1-2 minutes until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the onion and spice mixture.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Once the rice is cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
  7. In a separate bowl, mix the cooked chickpeas with salt and pepper to taste.
  8. To serve, place a generous scoop of hummus on top of the fluffy rice and add the seasoned chickpeas. Garnish with fresh parsley.
