- Basmati rice - 150 grams
- Cooked chickpeas - 100 grams
- Hummus - 100 grams
- Vegetable broth - 300 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 15 minutes.
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, ground cumin, and ground coriander, cooking for an additional 1-2 minutes until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the onion and spice mixture.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
- In a separate bowl, mix the cooked chickpeas with salt and pepper to taste.
- To serve, place a generous scoop of hummus on top of the fluffy rice and add the seasoned chickpeas. Garnish with fresh parsley.
