  • Cauliflower rice - 200 grams
  • Unsweetened almond milk - 500 ml
  • Erythritol (or preferred low-carb sweetener) - 3 tablespoons
  • Vanilla extract - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Cardamom powder - 1/4 teaspoon
  • Salt - a pinch
  • Chopped pistachios (for garnish) - 2 tablespoons

Steps

  1. In a saucepan, combine the cauliflower rice, almond milk, erythritol, vanilla extract, ground cinnamon, cardamom powder, and a pinch of salt.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking.
  3. Once it starts to simmer, reduce the heat to low and cook for about 20 minutes, stirring frequently, until the mixture thickens to a pudding-like consistency.
  4. Remove from heat and let it cool slightly before serving.
  5. Divide the Riz Bil Halib into two serving bowls and garnish with chopped pistachios.
