Ingredients

  • Jasmine rice - 50 grams
  • Whole milk - 500 milliliters
  • Greek yogurt - 100 grams
  • Sugar - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cardamom powder - 1/4 teaspoon
  • Cinnamon powder - 1/4 teaspoon
  • Pistachios, chopped - 20 grams
  • Rose water - 1 teaspoon
  • Salt - a pinch

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a saucepan, combine the rinsed rice and whole milk. Bring to a gentle boil over medium heat while stirring occasionally.
  3. Once boiling, reduce the heat to low and let it simmer for about 15 minutes, stirring frequently to prevent sticking.
  4. Add the sugar, vanilla extract, cardamom powder, cinnamon powder, and a pinch of salt to the rice mixture. Stir well to combine.
  5. Continue to simmer for another 5-10 minutes until the mixture thickens to a creamy consistency.
  6. Remove from heat and let it cool slightly, then fold in the Greek yogurt until fully incorporated.
  7. Pour the rice pudding into serving dishes and refrigerate for at least 1 hour to set.
  8. Before serving, drizzle with rose water and garnish with chopped pistachios.
