- Jasmine rice - 50 grams
- Whole milk - 500 milliliters
- Greek yogurt - 100 grams
- Sugar - 30 grams
- Vanilla extract - 1 teaspoon
- Cardamom powder - 1/4 teaspoon
- Cinnamon powder - 1/4 teaspoon
- Pistachios, chopped - 20 grams
- Rose water - 1 teaspoon
- Salt - a pinch
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a saucepan, combine the rinsed rice and whole milk. Bring to a gentle boil over medium heat while stirring occasionally.
- Once boiling, reduce the heat to low and let it simmer for about 15 minutes, stirring frequently to prevent sticking.
- Add the sugar, vanilla extract, cardamom powder, cinnamon powder, and a pinch of salt to the rice mixture. Stir well to combine.
- Continue to simmer for another 5-10 minutes until the mixture thickens to a creamy consistency.
- Remove from heat and let it cool slightly, then fold in the Greek yogurt until fully incorporated.
- Pour the rice pudding into serving dishes and refrigerate for at least 1 hour to set.
- Before serving, drizzle with rose water and garnish with chopped pistachios.
