Ingredients

  • Basmati rice - 1 cup
  • Lamb shoulder, cut into cubes - 250 grams
  • Onion, finely chopped - 1 medium
  • Garlic cloves, minced - 2
  • Cinnamon stick - 1
  • Allspice berries - 4
  • Cardamom pods - 3
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 2 cups
  • Fresh parsley, chopped - 2 tablespoons
  • Toasted pine nuts - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and sauté for another minute until fragrant. Then, add the lamb cubes and brown on all sides.
  4. Stir in the cinnamon stick, allspice berries, cardamom pods, bay leaf, salt, and black pepper. Cook for about 5 minutes to release the spices' flavors.
  5. Add the water to the pot and bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes, or until the lamb is tender.
  6. While the lamb is cooking, drain the soaked rice and set aside. Once the lamb is tender, remove it from the pot and set aside, keeping the broth.
  7. In the same pot, add the drained rice to the broth, ensuring there's enough liquid to cover the rice completely. If needed, add a little more water.
  8. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and cook for about 15 minutes, or until the rice is fluffy and has absorbed all the liquid.
  9. Once done, fluff the rice with a fork and gently fold in the cooked lamb. Garnish with chopped parsley and toasted pine nuts before serving.
