Ingredients
- Basmati rice - 1 cup
- Lamb shoulder, cut into cubes - 250 grams
- Onion, finely chopped - 1 medium
- Garlic cloves, minced - 2
- Cinnamon stick - 1
- Allspice berries - 4
- Cardamom pods - 3
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 2 cups
- Fresh parsley, chopped - 2 tablespoons
- Toasted pine nuts - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sauté for another minute until fragrant. Then, add the lamb cubes and brown on all sides.
- Stir in the cinnamon stick, allspice berries, cardamom pods, bay leaf, salt, and black pepper. Cook for about 5 minutes to release the spices' flavors.
- Add the water to the pot and bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes, or until the lamb is tender.
- While the lamb is cooking, drain the soaked rice and set aside. Once the lamb is tender, remove it from the pot and set aside, keeping the broth.
- In the same pot, add the drained rice to the broth, ensuring there's enough liquid to cover the rice completely. If needed, add a little more water.
- Bring the mixture to a gentle boil, then reduce the heat to low, cover, and cook for about 15 minutes, or until the rice is fluffy and has absorbed all the liquid.
- Once done, fluff the rice with a fork and gently fold in the cooked lamb. Garnish with chopped parsley and toasted pine nuts before serving.
