Ingredients

  • Basmati rice - 1 cup (200g)
  • Chicken thighs, boneless and skinless - 300g
  • Chicken broth - 2 cups (500ml)
  • Onion, finely chopped - 1 medium (100g)
  • Garlic, minced - 2 cloves
  • Cinnamon stick - 1
  • Allspice powder - 1/2 tsp
  • Cumin powder - 1/2 tsp
  • Salt - 1 tsp
  • Black pepper - 1/2 tsp
  • Olive oil - 2 tbsp
  • Fresh parsley, chopped - 2 tbsp
  • Pine nuts, toasted - 2 tbsp
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the chicken thighs, cinnamon stick, allspice, cumin, salt, and black pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes.
  6. Remove the chicken from the pot and set aside. Add the soaked and drained rice to the pot, stir gently, and place the chicken on top.
  7. Cover and cook on low heat for an additional 15 minutes, or until the rice is tender and has absorbed the liquid.
  8. Remove from heat and let it sit for 5 minutes before fluffing the rice with a fork. Discard the cinnamon stick.
  9. Serve the rice and chicken garnished with toasted pine nuts and chopped parsley, with lemon wedges on the side.
