- Basmati rice - 1 cup (200g)
- Chicken thighs, boneless and skinless - 300g
- Chicken broth - 2 cups (500ml)
- Onion, finely chopped - 1 medium (100g)
- Garlic, minced - 2 cloves
- Cinnamon stick - 1
- Allspice powder - 1/2 tsp
- Cumin powder - 1/2 tsp
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Olive oil - 2 tbsp
- Fresh parsley, chopped - 2 tbsp
- Pine nuts, toasted - 2 tbsp
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the chicken thighs, cinnamon stick, allspice, cumin, salt, and black pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes.
- Remove the chicken from the pot and set aside. Add the soaked and drained rice to the pot, stir gently, and place the chicken on top.
- Cover and cook on low heat for an additional 15 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit for 5 minutes before fluffing the rice with a fork. Discard the cinnamon stick.
- Serve the rice and chicken garnished with toasted pine nuts and chopped parsley, with lemon wedges on the side.
