Ingredients

  • Cauliflower - 400 grams
  • Ground lamb - 250 grams
  • Onion - 1 medium, finely chopped

  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sauté until translucent.
  4. Add the ground lamb to the skillet, cooking until browned. Break it up with a wooden spoon as it cooks.
  5. Stir in the cinnamon, allspice, cumin, salt, and black pepper. Cook for another 2-3 minutes to allow the spices to bloom.
  6. In a separate pan, heat the remaining tablespoon of olive oil and add the cauliflower rice. Sauté for about 5-7 minutes until tender.
  7. Combine the lamb mixture with the sautéed cauliflower rice, stirring well to combine.
  8. Transfer the mixture to an oven-safe dish, spreading it evenly. Bake in the preheated oven for 10 minutes.
  9. Remove from the oven, garnish with toasted pine nuts and chopped parsley before serving.
