- Ground lamb - 250 grams

- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 30 grams, toasted
Steps
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the ground lamb to the skillet, cooking until browned. Break it up with a wooden spoon as it cooks.
- Stir in the cinnamon, allspice, cumin, salt, and black pepper. Cook for another 2-3 minutes to allow the spices to bloom.
- In a separate pan, heat the remaining tablespoon of olive oil and add the cauliflower rice. Sauté for about 5-7 minutes until tender.
- Combine the lamb mixture with the sautéed cauliflower rice, stirring well to combine.
- Transfer the mixture to an oven-safe dish, spreading it evenly. Bake in the preheated oven for 10 minutes.
- Remove from the oven, garnish with toasted pine nuts and chopped parsley before serving.
