Ingredients

  • Basmati rice - 1 cup
  • Lamb shoulder - 300 grams, cut into cubes
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Chicken or vegetable broth - 2 cups
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the lamb cubes and brown on all sides, about 5-7 minutes.
  5. Add the diced carrot, zucchini, and tomato to the pot, and cook for another 5 minutes until the vegetables begin to soften.
  6. Sprinkle in the cumin, cinnamon, turmeric, salt, and black pepper, stirring to coat the lamb and vegetables evenly.
  7. Pour in the chicken or vegetable broth and bring to a gentle boil.
  8. Drain the soaked rice and add it to the pot, stirring well. Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the rice is cooked and has absorbed the liquid.
  9. Remove from heat and let it sit covered for an additional 5 minutes.
  10. Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
