- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Chicken or vegetable broth - 2 cups
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the lamb cubes and brown on all sides, about 5-7 minutes.
- Add the diced carrot, zucchini, and tomato to the pot, and cook for another 5 minutes until the vegetables begin to soften.
- Sprinkle in the cumin, cinnamon, turmeric, salt, and black pepper, stirring to coat the lamb and vegetables evenly.
- Pour in the chicken or vegetable broth and bring to a gentle boil.
- Drain the soaked rice and add it to the pot, stirring well. Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, garnish with fresh parsley, and serve warm.
