- Cauliflower rice - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground lamb - 250 grams
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- In a bowl, combine the ground lamb, cumin, cinnamon, salt, and black pepper. Mix well to combine all the spices into the meat.
- Form the lamb mixture into small kebab shapes or patties.
- In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the kebabs and cook for about 4-5 minutes on each side, or until browned and cooked through.
- While the kebabs are cooking, add the cauliflower rice to the skillet with the sautéed onion and garlic. Stir to combine and cook for about 5-7 minutes until the cauliflower is tender.
- Remove the skillet from heat and fold in the toasted pine nuts, chopped parsley, and lemon juice into the cauliflower rice.
- Serve the kebabs over a bed of the cauliflower rice, garnished with extra parsley if desired.
