Ingredients

  • Cauliflower rice - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground lamb - 250 grams
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. In a bowl, combine the ground lamb, cumin, cinnamon, salt, and black pepper. Mix well to combine all the spices into the meat.
  4. Form the lamb mixture into small kebab shapes or patties.
  5. In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the kebabs and cook for about 4-5 minutes on each side, or until browned and cooked through.
  6. While the kebabs are cooking, add the cauliflower rice to the skillet with the sautéed onion and garlic. Stir to combine and cook for about 5-7 minutes until the cauliflower is tender.
  7. Remove the skillet from heat and fold in the toasted pine nuts, chopped parsley, and lemon juice into the cauliflower rice.
  8. Serve the kebabs over a bed of the cauliflower rice, garnished with extra parsley if desired.
