  • Almonds - 30 grams, sliced
  • Parsley - 1 tablespoon, chopped for garnish

Steps

  1. Begin by ricing the cauliflower. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
  5. Sprinkle the cinnamon, allspice, salt, and black pepper over the chicken and mix well.
  6. Pour in the chicken broth and bring to a simmer. Cook for 10 minutes until the chicken is cooked through and the flavors meld.
