- Cauliflower - 1 medium head, riced
- Chicken breast - 300 grams, diced

- Onion - 1 small, finely chopped

- Cinnamon - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chicken broth - 200 ml
- Almonds - 30 grams, sliced
- Parsley - 1 tablespoon, chopped for garnish
Steps
- Begin by ricing the cauliflower. Cut the cauliflower into florets and pulse in a food processor until it resembles rice.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and sauté for another minute until fragrant.
- Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
- Sprinkle the cinnamon, allspice, salt, and black pepper over the chicken and mix well.
- Pour in the chicken broth and bring to a simmer. Cook for 10 minutes until the chicken is cooked through and the flavors meld.
- In a separate pan, lightly sauté the riced cauliflower in a little olive oil for about 5 minutes until tender. Season with salt if desired.
- Serve the chicken mixture over the cauliflower rice, garnished with sliced almonds and chopped parsley.
