- Basmati rice - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Green peas - 1/2 cup
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Pine nuts - 2 tablespoons, toasted (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrot, bell pepper, and zucchini to the pot. Sauté for about 5-7 minutes until the vegetables start to soften.
- Stir in the cumin, cinnamon, salt, and black pepper, mixing well to coat the vegetables.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
- Pour in the 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.
- Once cooked, fluff the rice with a fork and gently stir in the green peas and chopped parsley.
- Serve warm, garnished with toasted pine nuts.
