Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Green peas - 1/2 cup
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 2 tablespoons, toasted (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced carrot, bell pepper, and zucchini to the pot. Sauté for about 5-7 minutes until the vegetables start to soften.
  5. Stir in the cumin, cinnamon, salt, and black pepper, mixing well to coat the vegetables.
  6. Drain the soaked rice and add it to the pot, stirring gently to combine with the vegetables and spices.
  7. Pour in the 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.
  8. Once cooked, fluff the rice with a fork and gently stir in the green peas and chopped parsley.
  9. Serve warm, garnished with toasted pine nuts.
