- Radishes - 4, thinly sliced
- Green bell pepper - 1, diced
- Parsley - 30 grams, chopped
- Mint - 15 grams, chopped
- Lemon juice - 30 milliliters
- Olive oil - 15 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pita bread - 2 small, toasted and broken into pieces
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, bring 300 milliliters of water to a boil. Add the soaked rice and a teaspoon of salt. Reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the fattoush salad by combining the diced cucumber, tomato, radishes, green bell pepper, parsley, and mint in a large bowl.
