Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Radishes - 4, thinly sliced
  • Green bell pepper - 1, diced
  • Parsley - 30 grams, chopped
  • Mint - 15 grams, chopped
  • Lemon juice - 30 milliliters
  • Olive oil - 15 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pita bread - 2 small, toasted and broken into pieces

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, bring 300 milliliters of water to a boil. Add the soaked rice and a teaspoon of salt. Reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and the water is absorbed.
  3. While the rice is cooking, prepare the fattoush salad by combining the diced cucumber, tomato, radishes, green bell pepper, parsley, and mint in a large bowl.
  4. In a small bowl, whisk together the lemon juice, olive oil, black pepper, and a pinch of salt to create the dressing.
  5. Once the rice is cooked, fluff it with a fork and allow it to cool slightly before mixing it with the salad ingredients.
  6. Drizzle the dressing over the rice and salad mixture, and toss gently to combine.
