- Water - 300 milliliters
- Cooked chickpeas - 100 grams
- Cucumber - 1 small, diced
- Tomato - 1 medium, diced
- Radish - 3, thinly sliced
- Green onion - 2, chopped
- Fresh parsley - 30 grams, chopped
- Mint leaves - 10 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Pomegranate seeds - 30 grams
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
- In a medium saucepan, bring 300 milliliters of water to a boil, add the soaked rice, and a pinch of salt. Cover and reduce the heat to low, cooking for 15 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, prepare the fattoush salad by combining diced cucumber, tomato, radish, green onion, parsley, and mint in a bowl.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to create the dressing. Pour it over the salad mixture and toss to combine.
- Once the rice is cooked, fluff it with a fork and let it cool slightly. Then, layer the rice on a serving plate.
- Top the rice with the fattoush salad mixture and scatter the cooked chickpeas and pomegranate seeds on top.
