Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Cooked chickpeas - 100 grams
  • Cucumber - 1 small, diced
  • Tomato - 1 medium, diced
  • Radish - 3, thinly sliced
  • Green onion - 2, chopped
  • Fresh parsley - 30 grams, chopped
  • Mint leaves - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Pomegranate seeds - 30 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes.
  2. In a medium saucepan, bring 300 milliliters of water to a boil, add the soaked rice, and a pinch of salt. Cover and reduce the heat to low, cooking for 15 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the fattoush salad by combining diced cucumber, tomato, radish, green onion, parsley, and mint in a bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to create the dressing. Pour it over the salad mixture and toss to combine.
  5. Once the rice is cooked, fluff it with a fork and let it cool slightly. Then, layer the rice on a serving plate.
