Ingredients
- Basmati rice - 1 cup
- Chickpeas (cooked or canned) - 1 cup
- Garlic - 4 cloves, minced
- Lemon juice - 2 tablespoons
- Tahini - 2 tablespoons
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 2 cups
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the drained chickpeas to the saucepan, season with cumin, paprika, salt, and black pepper. Stir to combine and cook for 5 minutes, allowing the chickpeas to absorb the flavors.
- In a separate pot, bring 2 cups of water to a boil. Drain the soaked rice and add it to the boiling water. Reduce the heat to low, cover, and cook for 15-20 minutes or until the rice is tender and water is absorbed.
- In a small bowl, mix tahini, lemon juice, and 1 tablespoon of water to create a smooth sauce. Adjust the consistency with more water if needed.
- Once the rice is cooked, fluff it with a fork. Serve the rice topped with the spiced chickpeas, drizzle with tahini sauce, and garnish with fresh parsley.
