- Zucchini, diced - 1 medium

- Turmeric powder - 1/2 teaspoon

- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced carrots, bell pepper, and zucchini. Cook for about 5-7 minutes until the vegetables are slightly softened.
- Add the cumin, cinnamon, turmeric, salt, and black pepper, stirring well to combine with the vegetables.
- Drain the soaked rice and add it to the saucepan, stirring gently to mix with the vegetables and spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
- Stir in the chopped parsley and lemon juice before serving.
