Ingredients

  • Basmati rice - 1 cup

  • Carrots, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the diced carrots, bell pepper, and zucchini. Cook for about 5-7 minutes until the vegetables are slightly softened.
  5. Add the cumin, cinnamon, turmeric, salt, and black pepper, stirring well to combine with the vegetables.
  6. Drain the soaked rice and add it to the saucepan, stirring gently to mix with the vegetables and spices.
  7. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
  9. Stir in the chopped parsley and lemon juice before serving.
