Ingredients
- Basmati rice - 150 grams
- Vegetable broth - 400 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Allspice - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes before draining.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional 30 seconds until fragrant.
- Stir in the diced carrot and bell pepper, cooking for about 5 minutes until they begin to soften.
- Add the soaked and drained rice to the pan, stirring to combine with the vegetables. Cook for another 2-3 minutes to lightly toast the rice.
- Add the vegetable broth, cumin, cinnamon, allspice, salt, and black pepper. Bring to a boil, then reduce the heat to low.
- Cover the saucepan and simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
- In the last 5 minutes of cooking, add the green peas on top of the rice and re-cover to allow them to steam.
- Once done, fluff the rice with a fork and let it sit for a few minutes before serving.
